This week I wanted something warm and cozy for breakfast that could be made once, and then eaten all week long. Something that felt special but took almost no effort, that was delicious and easy to to make too. This Berry Baked Oatmeal ticks all those boxes, is impressive on the plate, and so, so good!

It's packed with fiber, naturally sweetened, and full of good for you ingredients.

Oats are one of my favorite staples. They are so versatile, loaded with soluble fiber, and amazing for our gut health and digestion. Starting your day with a fiber rich breakfast like this one sets a really strong foundation for how you feel the rest of the day! I’ve been pairing this with a protein shake for breakfast this week, and it keeps me full and energized all morning long. Dig in my friends, this one is amazing!

Rolled oats are rich in beta glucan, a type of soluble fiber that supports healthy digestion and feeds beneficial gut bacteria. Combined with chia seeds, this breakfast gives you a solid dose of fiber to start your morning feeling great!

It's naturally sweetened! One ripe banana and just two tablespoons of maple syrup give this oatmeal all the sweetness it needs. There's no refined sugar, and every ingredient is something you can feel good about!


Elisa's Berry Baked Oatmeal

Beautiful and delicious, this Berry Baked Oatmeal comes together quickly, is high in fiber, naturally sweetened, and great for meal prep!

Yield: 9 servings

Prep time: 10 minutes, Bake time: 40 minutes

Ingredients:

Blender mixture:

  • 1 large ripe banana (the spottier the better)

  • 2 eggs

  • 1 1/2 cups almond milk (or milk of choice)

  • 1/4 cup avocado oil

  • 2 tablespoons maple syrup (add more if you prefer it sweeter)

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking powder

  • 1/4 teaspoon sea salt

  • 1 1/2 teaspoons cinnamon

Dry add-ins:

  • 2 3/4 cups gluten free rolled oats (I used Bob's Red Mill)

  • 1 tablespoon chia seeds

  • 1 cup mixed berries (fresh or frozen)

Toppings:

  • 1/2 cup mixed berries

  • 2 tablespoons sliced raw almonds

Instructions:

  1. Preheat your oven to 375 degrees Fahrenheit (convection setting if you have it).

  2. Add the banana, eggs, almond milk, avocado oil, maple syrup, vanilla, baking powder, sea salt, and cinnamon to a high speed blender or Vitamix. Blend until completely smooth.

  3. Add the rolled oats, chia seeds, and 1 cup of mixed berries to the blender. Pulse a few times until everything is well combined. Don’t blend too much or you’ll end up with a pink oat cake.

  4. Pour the mixture into a lightly greased 9x9 baking dish and spread it evenly.

  5. Scatter the remaining 1/2 cup of berries and the sliced almonds across the top.

  6. Bake for about 40-45 minutes, until the top is golden and set.

  7. Let it cool, then slice into 9 squares.

  8. Enjoy!

Notes:

  • Storage:

    Keep leftovers in an airtight container in the fridge for up to 5 days. Reheat a square in the microwave for about 60 seconds, or in a toaster oven at 350 degrees for about 12 minutes.

  • Freezer friendly: Wrap individual squares in parchment paper and store in a freezer bag for up to 3 months. Thaw overnight in the fridge or reheat from frozen.

  • Complete meal tip: Pair a square with your favorite protein shake on the side for a balanced breakfast.
