If you’re a toast lover, this one’s for you! Toast with vegan butter is delicious, but let’s be honest, it only lasts about an hour before you’re hungry again. The good news is, it’s simple to take this everyday staple and turn it into a meal that actually keeps you full!
Toast is quick, easy, and always satisfying, but the real fun comes when you start adding toppings. A creamy spread, something fresh and green, a boost of protein, and a bright garnish. That’s all it takes to to turn toast into a complete meal that’s balanced, satisfying and full of flavor.
One of my favorite ways to make a Bright, Balanced, Glowing Toast is with a good gluten-free sourdough, hummus, sautéed chard, a jammy egg or two, then top it with fresh basil, and a drizzle of really good olive oil. I also add calendula petals because flowers are just so fun!

Bright, Balanced, Glowing Toast
A simple toast formula that turns this everyday staple into a fun, balanced and satisfying meal!

Yield: 1 serving (2 small slices)
Ingredients:
Base:
2 small slices gluten free bread, toasted (or bread of choice)
Spread (choose one):
2 tablespoons hummus
2 tablespoons pesto
2 tablespoons chimichurri
2 tablespoons roasted red pepper spread
Vegetable(choose one):
½ cup sautéed hearty greens (chard, kale, or collards)
½ cup fresh baby arugula
½ cup fresh baby spinach
Protein (choose one):
½ cup chickpeas
½ cup white beans
2 slices organic turkey
2 slices prosciutto
2 jammy eggs
Garnish (choose 2 or 3):
1 teaspoon good olive oil
1 tablespoon chopped fresh basil, cilantro, or parsley
1 tablespoon pickled onions, or green onions
1 tablespoon calendula petals
Finishing Touch (optional but delicious):
Flaky sea salt
Fresh ground black pepper
Favorite herb blend
Instructions:
Toast your gluten free bread (or bread of choice) until golden.
Spread each slice with 2 tablespoons of your favorite spread.
Add a layer of greens.
Top with your protein choice.
Finish with herbs, a drizzle of olive oil, and a sprinkle of flaky sea salt and fresh ground black pepper, or any other garnish or spices you love!
