I’ve got a fun recipe for you today! If you’ve got 5 minutes to spare after dinner, you can have this beautiful breakfast in the morning!

This Dark Chocolate Cherry Chia Pudding satisfies every craving, while packing in fiber AND protein!

It’s a winner of a breakfast, so satisfying, creamy, and indulgent but healthy! As always, there’s no dairy or gluten, it’s quick to make, and ultra delicious!

You whisk everything up in a jar, pop it in the fridge, and head to bed. In the morning, you pile on creamy yogurt, juicy cherries, a drizzle of almond butter, and a little crunch from cacao nibs and toasted almonds. It’s so good!

Dark Chocolate Cherry Chia Pudding

A creamy, fiber rich breakfast packed with protein and anti-inflammatory ingredients. So indulgent, healthy, and sneakily good for you! With just 5 minutes of prep the night before, you’ll have a chocolate cherry breakfast that tastes like dessert!

Yield: 1 serving

Ingredients:

For the Pudding:

  • 3 tablespoons chia seeds

  • 1 cup almond milk, or milk of choice

  • 1 tablespoon maple syrup (or less, to taste)

  • 1 scoop chocolate protein powder (I used OWYN’s)

  • 1 tablespoon unsweetened cocoa powder

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon cinnamon

  • Pinch of sea salt

For the Toppings:

  • 1/3 cup frozen dark sweet cherries, thawed

  • 2 tablespoons dairy free yogurt, or greek yogurt if you can have dairy

  • 1 teaspoon almond butter

  • 1 teaspoon cacao nibs

  • Sprinkle of slivered toasted almonds

Instructions:

  1. Add the chia seeds, almond milk, maple syrup, protein powder, cocoa powder, vanilla, cinnamon, and sea salt to a jar.

  2. Whisk well until smooth and there are no lumps.

  3. Cover and refrigerate for at least 4 hours, or overnight. Place your cherries in a jar in the fridge to defrost overnight.

  4. In the morning, give it a good stir.

  5. Spoon the dairy free yogurt on top, then add the thawed cherries and all their juices. Drizzle with almond butter, sprinkle on the cacao nibs and toasted slivered almonds, and dig in.

  6. Enjoy!

Notes:

  • Make a few jars at once and store them in the fridge for up to 4 days.

  • Raspberries or blackberries are a fun swap if you don't have cherries on hand.
