If you’ve ever had one, you know that it takes so much time, and doesn’t leave a whole lot of opportunity to cook, do laundry, or all those things that are required to run a household. He keeps me busy, but he is so adorable. It’s totally worth it!
Needless to say, quick meals are on repeat around here, and these Lemon Blueberry Overnight Oats have been saving me!
They have a creamy, protein-packed base that's brightened up with fresh lemon juice, zest, and juicy blueberries. It's the best thing to wake up to!
If you prefer a warmer breakfast, you can heat them up too. Just a quick zap in the microwave does the trick, or you can add a little more almond milk and heat them on the stove top too. Warm or cold, they are just so good!

Lemon Blueberry Overnight Oats
Creamy overnight oats with bright lemon, juicy blueberries, and a boost of protein for the perfect make ahead, feel-good breakfast.

Yield: 4 Servings
Ingredients:
Overnight Oat Base:
2 cups unsweetened vanilla almond milk
2 scoops plant-based vanilla protein powder
4 teaspoons maple syrup
Juice of 2 lemons (about 2 tablespoons)
1 tablespoon lemon zest (from 2 lemons)
½ cup dairy-free yogurt (Greek yogurt if not dairy-free)
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
2 tablespoons chia seeds
2 cups gluten-free old-fashioned rolled oats
1 cup fresh or frozen blueberries
Optional Toppings:
¼ cup slivered almonds
Extra dairy-free yogurt, fresh blueberries, almond butter, lemon zest
Instructions:
The night before you want your oats:
In a mixing bowl, or large tupperware, whisk together the almond milk, protein powder, maple syrup, lemon juice, yogurt, vanilla, cinnamon, and chia seeds until well combined and smooth.
Stir in the oats and lemon zest. Transfer the mixture into four 16oz mason jars (for portioned out servings), or into one big tupperware. Evenly top with the blueberries. Refrigerate overnight (or 6-8 hours). In the morning top with slivered almonds, and other toppings of choice if desired. Enjoy!
Notes:
These oats keep well in the fridge for up to 5 days.
For easy meal prep, portion into individual jars or airtight containers so you can grab one and go. Add your toppings of choice to each container. You may want to keep the almonds separate so they don’t get soggy.
Enjoy cold or warm! They’re great both ways.
