I realized today that it’s been way too long since I’ve posted anything. But I’m back and so excited to share this sunny little breakfast idea with you! These Lemon Strawberry Chia Parfaits are light, refreshing, and perfect for warm summer mornings. The lemon zest adds a beautiful bright zing, and when it’s layered with juicy strawberries and crunchy granola, it feels like such a treat! You can feel great about these though. They look fancy, but they’re simple enough for breakfast, snack time, or even a healthy dessert.
These dairy free parfaits start with a creamy base of cashew coconut yogurt, chia seeds, and vanilla protein powder, so they are rich in plant based protein, fiber, and healthy fats. So pretty to look at, fun to eat, and super easy to prep ahead! Just mix up the base the night before, and in the morning you can layer it up or simply top with granola and berries and head out the door. They’re filling, satisfying, and will keep you energized all morning long!
These have definitely been on a weekly rotation in my house lately, and I can’t wait for you to try them!

Lemon Strawberry Chia Parfaits
A creamy, dairy free lemony yogurt base, layered with fresh strawberries and granola for a nourishing, delicious breakfast.

Yield: 2 servings
Ingredients:
300g (about 1 and 1/3 cups) Forager Unsweetened Plain Cashew Coconut Yogurt
Zest and juice of 1 lemon
2 teaspoons maple syrup
1 tablespoon chia seeds
2 scoops plant based vanilla protein powder (about 1/3 cup)
1 cup fresh strawberries, sliced
1/2 cup granola of choice
Instructions:
In a medium bowl, mix together the yogurt, lemon zest and juice, maple syrup, chia seeds, and protein powder until smooth and well combined.
Cover and refrigerate overnight (or at least 4 hours) to allow it to thicken.
In the morning give the mixture a stir. Layer it into two jars or glasses with sliced strawberries and granola.
Serve immediately and enjoy!
If you’re planning on eating it later, store the granola separately so it doesn’t get soggy.
This will keep in the fridge for up to 3 days.
Notes:
Feel free to use blueberries, raspberries, or a mix of berries depending on what’s in season.
Almond, soy, or oat based yogurt also work well if you don’t have cashew coconut.
I used Garden of Life’s Plant Based Sport Vanilla Protein Powder, and homeade granola. Choose what you like best!

1 palm protein, 1 cupped handful carb, 1 thumb fat
