Today, I'm excited to share a recipe with you that is so good, it might not even make it into the refrigerator! It sure didn't in my house. This delicious Sesame Ginger Broccoli Salad is a broccoli lovers dream come true. For those feel that broccoli is bland, this recipe will jazz it up to be zingy, warming, a little spicy, and delightful!

This Sesame Ginger Broccoli Salad is a great example of how simple, nourishing ingredients can come together to create something special.  It's quick to make, can be paired with your favorite protein and rice for a complete meal, or simply enjoyed as a healthy snack. This salad is an excellent way to add more greens to your diet without sacrificing flavor. Whether you enjoy the warm, spicy flavor of ginger or are looking for a new way to enjoy broccoli, this dish is perfect for you.

Although broccoli is not typically thought of as a high-protein food, it still provides a significant amount of protein to your diet. The two large heads of broccoli used in this recipe provide almost 17 grams of protein. Sesame Ginger Broccoli Salad

Servings: 2 large or 4 small

Ingredients:

  • 2 large heads of broccoli cut into florets, stems peeled and sliced (about 6.5 cups)

  • 1-2 Tbsp Fresh Ginger, grated (use more if you like the flavor and heat of ginger)

  • 1 tsp minced garlic (about 2 cloves) 

  • 2 Tbsp Sesame oil

  • 2 Tbsp Olive Oil

  • 2 Tbsp Rice Vinegar

  • 2 Tbsp Low Sodium Tamari (gluten-free soy sauce) 

  • 1 Tbsp Honey or maple syrup

  • Sesame seeds for topping

  • Red Chile Flakes (for optional spice)

Instructions:

Steam the broccoli until crisp tender, about 6-7 minutes. Cool and place in a large bowl.

In a separate small bowl, whisk together the grated ginger, garlic, sesame oil, olive oil, rice vinegar, tamari and honey until well combined.

Pour over the steamed broccoli, mix well. Plate and top with sesame seeds, and red chile flakes if desired. Enjoy!

Storage:

To keep this salad fresh and flavorful, store in an airtight container in the refrigerator for up to two days.
