It comes together super fast, takes minimal effort, and has everything you need to keep you full and satisfied for hours. Mornings don’t always allow for time to make a big breakfast, but if you have 5 minutes, and some smoked salmon on hand you can whip this up in a flash, and you’ll have a balanced meal in no time.
Top your favorite bread with pesto, avocado, smoked salmon, sprouts, and if you’re feeling fancy add a little lemon zest and fresh cracked black pepper!
This will keep you fuller much longer than a typical toast with jam, because it adds in lean protein, a little veg, and healthy fats from the avocado. All of those combined with the carbohydrate from the bread equal a balanced meal, which is so helpful for satiety!

Smoked Salmon Avocado Toast

Yield: 2 Servings
Ingredients:
2 pieces of your favorite bread (gluten free if needed), toasted
2 tablespoons dairy-free pesto
1/2 avocado, sliced
4 oz wild smoked salmon
1/2 cup microgreens or sprouts of choice
Zest of 1 lemon
Cracked black pepper
Instructions:
Toast the bread, and spread both slices with 1 tbsp of pesto.
Top each slice with equal amounts of the avocado, and smoked salmon, then the microgreens.
Add the lemon zest and cracked black pepper.
Enjoy right away!
