Vanilla Apricot Protein Bites

These little bites come together quickly, and are perfect for afternoon tea, or fun for a post workout pick-me-up.  Packed with protein and healthy fats, these nutrient-dense treats are sure to satisfy!

Yield: 12 bites/servings

Ingredients:

  • 1 cup raw cashews

  • 2/3 cup unsweetened dried apricots

  • 1/4 cup plant based vanilla protein powder

  • 2 tbsp coconut oil (solid, not melted)

Instructions:

  1. In a food processor fitted with an “S” blade, grind the cashews and apricots until they are finely chopped, resembling a course meal. 

  2. Add the protein powder, and blend again until well combined. 

  3. Add the coconut oil in 4 separate chunks (not just one big glob), and pulse until the mixture comes together when pressed between your fingers. With clean hands, roll the dough into 12 balls. Place on a parchment lined plate and refrigerate until firm. Once firm, store in a mason jar or an airtight container in the freezer or refrigerator.  They will keep for 6-7 days in the fridge. 

  4. For longer storage place in an airtight container in the freezer, and store up to 6 months.

  5. Enjoy!
