Fall is officially here, and along with it comes one of my favorite times of year. Apple season! There’s something so comforting about crisp mornings, cozy sweaters, and the smell of cinnamon and stewed apples filling the kitchen.
Apple crisp has always been one of my favorite desserts, and this recipe was inspired by that love. I wanted to take all the best parts, the warm spiced apples, the golden crumble topping, and that cozy, nostalgic flavor, and turn them into something more nourishing.
These Apple Crumble Overnight Oats have a creamy oat base layered with cinnamon spiced stewed apples, and finished with a toasty crumble topping. It’s like dessert, only balanced, wholesome, and satisfying!
The best part is how easy they are to prep. Make them ahead over the weekend, and you’ll have breakfast ready to go for the week!

Apple Crumble Overnight Oats
Creamy overnight oats layered with cinnamon spiced apples and a sweet nutty crumble, for the perfect cozy, fall breakfast.

Yield: 3 Servings
Ingredients:
Overnight Oat Base:
In each jar put:
½ cups rolled oats
2 teaspoons chia seeds
2 teaspoons ground flax meal
3/4 cup milk of choice
1 tablespoon dairy free yogurt or yogurt of choice (plain or vanilla work well)
2 teaspoons maple syrup (optional)
½ teaspoon cinnamon or pumpkin pie spice
Small pinch sea salt
Once assembled, cover and refrigerate overnight.
Stewed Apple Layer (for 3 servings):
1 medium apple, cored and diced small (peel is okay)
1 tablespoon maple syrup
1 teaspoon cinnamon or pumpkin pie spice
1 tablespoon water
Place all ingredients into a small pot on the stove. Cook over medium heat for about 5 minutes, stirring occasionally, until the apples are softened and golden. Cool completely, then transfer to a small container and refrigerate until ready to use.
Crumble Topping (for 3 servings):
3 tablespoons oat flour
3 tablespoons almond flour
3 tablespoons rolled oats
3 tablespoons finely chopped walnuts
1 ½ tablespoons almond butter
1 ½ tablespoons maple syrup
¾ teaspoon pumpkin pie spice, or cinnamon
Pinch of sea salt
Place all ingredients into a small bowl and mix until combined and crumbly. The texture should hold together slightly when pressed between your fingers. Store in the fridge until ready to assemble.
Assembly:
In the morning, layer each jar of oats with 1/3 of the stewed apples and 1/3 of the crumble. Add a spoonful of yogurt or a drizzle of nut butter if you like. For a warm breakfast, gently heat the oats and apples before topping with the crumble. Enjoy! 😊
Notes:
These oats keep well in the fridge for up to 4 days and can be enjoyed cold or warmed.
For meal prep, portion into jars or airtight containers for quick grab-and-go breakfasts.
To boost the protein, serve with vegan Greek yogurt, scrambled eggs or tofu, or enjoy with a protein shake on the side.
