I have these sweet memories of eating Borscht with my Grandma when I was little. I remember sharing these beautiful, vibrant bowls of soup with her on freezing winter days, and how cozy that was.
Here in my kitchen, soups have been repeating on the menu lately, and I wanted to recreate that childhood favorite in a way that was healthy, fresh, and simple for everyday cooking.
I am so happy to share this weeks souper-star, Cozy Borscht. It’s bright, full of flavor, packed with colorful veggies, and sure to bring a smile to your face when you eat it! The color is so impressive, and the flavor even more so. Sweet beets, earthy turnips, savory fennel, and a touch of lemon, all come together in a way that feels warm, cozy, hearty, and so delicious. This soup does have some chopping involved, so crank up the tunes, pull out your apron, and give yourself the gift of healthy meal prep. I guarantee you’ll be grateful the rest of the week!

Cozy Beet and Cabbage Borscht

Yield: 6 servings
Ingredients:
1 tbsp olive oil
1 large onion, diced
2 carrots, peeled and chopped
2 celery stalks, diced
1/2 tsp sea salt
1 tsp fennel seeds
3 garlic cloves, pressed or minced
1/4 cup tomato paste
6 cups water
2 medium white turnips, diced (or peeled and diced potato if you don’t like turnips)
1 pound beets, peeled and cut into small cubes
1 tbsp better than bullion veggie paste (chicken works too)
1 tsp smoked paprika
Fresh ground black pepper
2 cups thinly sliced purple cabbage
Juice of 1/2 lemon
For optional toppings:
Dairy free yogurt
Fresh chopped dill
Instructions:
Warm the olive oil in a large pot over medium heat. Add the onion, carrots, celery and sea salt. Sauté until they begin to soften, about 5 minutes.
Add the fennel seeds, garlic, and tomato paste. Stir well and cook until the garlic becomes fragrant, about 1 minute.
Add 1 cup (of the 6 cups) of water. Scrape up any stuck bits from the bottom of the pot.
Add the turnips and beets, veggie paste, paprika and fresh ground black pepper. Add 4 more cups of the water. Stir well, put the lid on and bring to a gentle boil, then turn down to a simmer. Simmer for 25 minutes, until the beets and turnips begin to soften.
Remove the lid and add the cabbage and the last 1 cup of water. If you like a brothier soup, add 2 cups of water (you may want to add a little more salt.) Simmer gently for 5-10 more minutes until the cabbage has softened. Stir well, add the juice of 1/2 lemon and taste. Add more lemon if you want a brighter flavor, or more salt if needed.
Serve with a spoonful of dairy free yogurt and a garnish of fresh dill if desired.
This keeps well for about 5 days in the fridge! It’s great for meal prep, and so healthy. Enjoy!
